I absolutely love having eggs in the morning. I used to always add in milk and cheese to make my eggs fluffier, but I’ve since found an even better (and more protein packed) alternative: cottage cheese!
I’ll start by cracking my 2 eggs into a bowl, then I’ll add in about 2 tbs of cottage cheese and whisk it all together.
Next, heat up a small frying pan with a little coconut oil or spritz of olive oil to medium/medium low heat.
When pan is warm, pour your eggs in and start scrambling! Add in some veggies to make things even healthier – my favorite combo is spinach, tomato, and then top with 1/4 an avocado at the end.
Stir frequently until eggs are cooked (about 3 minutes).
