Zucchini Noodles & Shrimp

 

Craving pasta, but don’t want to induldge in all the carbs? The perfect solution is to make Zoodles! (Spiralized zucchini noodles)! One cup of zucchini noodles has about 80 calories and 4 grams of carbs versus regular spaghetti which has about 220 calories and 43 grams of carbs. Zucchini noodles for the win!

 

If you haven’t tried them yet, do yourself a favor and buy a vegetable spiralizer! (I got this Vegetable Spiralizer one at Target for under $10). You can choose to peel the zucchini or leave the skin on, chop off the ends, and put it in spiralizer (which also gives your arm a little workout)! Zucchini hold A LOT of water. So, I lay mine out on paper towels and let them “sweat” for about 20 minutes. You can also pat them dry with a paper towel to soak up excess water.

 

Here is my Zoodles and Shrimp Recipe – it’s very light, but filling so it makes for the perfect summer meal.

 

▶heat 2 tbs olive oil over med heat and cook 12 pieces shrimp (I buy frozen – raw/never been cooked – tastes fresher that way) until pink (about 1-2 min per side) set aside in bowl for later

▶in same pan add in 3 cloves chopped garlic, and 2 cups chopped spinach and sauté, then add to shrimp that’s been set aside

▶in same pan add zucchini noodles (I used 3 large zucchini) and cook/toss approximately 3 min

▶add spinach/shrimp mixture to noodles, throw in some tomato, squeeze1/2 lemon and a few red pepper flakes. Top with sprinkle of fresh Parmesan!

▶Enjoy! It was so good! Whole thing probably took me 15 min to put together!
