Summers are filled with so many social gatherings, and often times we need to bring a dish to share to these events. During the hot summer months, there’s nothing better than a cool, light and refreshing appetizer.
I brought this Pineapple Mango Salsa to my family’s barbeque the other night, and it was a huge hit –even with the kiddos! It’s super easy to make, colorful and full of flavor.
Here’s all you need to do:
In a bowl combine:
-1 cup diced pineapple (fresh – not from a can)
-3/4 cup diced mango
-3 diced roma tomatoes (seeds removed)
-1 diced pepper (your choice of color – I used orange here)
-1/4 cup finely chopped purple onion
-3 Tbs finely chopped cilantro
-Juice from 2 freshly squeezed limes
-Dash of salt
Mix all together and serve in a pretty bowl! Or if you want to be really festive you could serve inside the rind of the pineapple!
Serve with tortilla chips. This salsa would also be amazing on top of some grilled fish or shrimp!
